Around the beginning of the 20th century, sushi developed into the form we know today. Nevertheless, sushi chefs experiment not only in Japan but everywhere in the world with a lot of creativity in new variants. Some of the most famous Western creations include "California Roll", "Inside Out" and "Ura-maki" ("rolled from inside"). In Japan, sushi is traditionally eaten out of hand while in Western countries chopsticks are preferred. This makes it necessary for a sushi chef to roll the reels much harder than usual in Japan. Appetizer to sushi is usually a miso soup and popular drinks for this are beer or green tea.
